Q: Is there a way to set up analytics to view more that just 30 days? Maybe several months at a time or a year at a time to see how many hits you've gotten over the past year or maybe since the website was initially launched?

I think there is a little confusion here. In terms of how Google measures 'new' vs. 'returning' visitors, that clock is set at thirty days. Google places a 'cookie' on their web browser, and that cookie is active for thirty days. So if they 're-visit' your site within thirty days, they count not as a 'new' but as a 'returning' visitor.
That said, Google Analytics will easily track data back many, many years. As soon as you install the tracking code, it begins to store data. Simply go to the top of the Analytics screen where the dates are and click on the downward arrow to open a dialog box. There you can enter dates, and also compare one time period to another.
