How important is Google Local for SEO?

Q: How important is the Google Maps/Google Local to the search results? And, should it be a given that you use it, sort of like sitemaps?

Google Local is HUGELY important for SEO. It is often the very first thing for a local search as in 'Pizza San Francisco,' and vendors that are listed there get very very good click thru's - often better than the natural results.
