If everyone starts doing SEO, won't it get terribly competitive?

It's competitive, and increasingly so. There is quite frankly an ARMs Race going on in terms of SEO. The companies that build out the best on-page strategies (good HTML templates, website structure, etc.), and couple that to the best off-page strategies tend to win out. In addition, having a coherent news / blog strategy and even social media strategy also help a great deal.
The fact of the matter is that business is moving online, and has been doing so for the past fifteen years since the advent of the Internet. Advertising and marketing are very competitive, and the online SEO world is increasingly so.
But, don't get discouraged! In my experience in most domains, the vast majority of businesses do a pretty terrible job of their SEO. So even small changes can propel you ahead of them. In addition, look out for your unique value proposition = unique long tail keywords - those are easier to dominate, and if they are a perfect fit for your customers, highly worth pursuing.
It is a competitive sport, this SEO. But you can win! It just takes knowledge, practice, and effort - all elements that you now have!
