OK, there are two types of sitemaps for search engine optimization, as I teach in our SEO course. 1) the HTML sitemap. This is VISIBLE to both humans AND to Google, and you should link to it at least from the home page, if not from EVERY page of the website at the very bottom. 2) the XML sitemap. This is NOT for humans, and does not need to be linked to from anywhere except the robots.txt file (which is solely for search engines), plus you need to notify Google of your XML sitemap in Webmaster tools.
As for images, if you do not want your images to show up in Google search... then having them NOFOLLOW is good. It just depends if you want those images to show in Google search or not.
